【凉菜】

糟卤鸡爪

鸡爪对半切开,焯水15分钟至断生,捞起浮沫;将焯水后的鸡爪浸泡于糟卤中,冷却后放入冰箱,静置一晚即可食用。

盐水毛豆

毛豆清洗干净,剪去两端置于锅中,放置盐、料酒、八角、花椒、葱姜,将水加满煮15分钟至毛豆断生,于冷藏室中静置一晚即可食用。

凉拌海蜇

海蜇提前一天泡发,焯水10秒钟即捞出。黄瓜切丝与海蜇丝搅拌,加适量醋、麻油、生抽、冰糖拌匀,静置入味。

五香木耳

木耳泡发,焯水,撕成小片;芥末、生抽、白糖、麻油混合搅拌;将调味汁洒在木耳上,拌匀,静置2-3小时入味。

【热菜】

梅菜扣肉

取足量梅干菜,第一遍过水之后丢弃汤汁,第二遍过水之后的汤汁备用。五花肉切小块,油锅爆热,冰糖上五花肉的糖色,加生抽、老抽、盐之后快速翻炒,随后将梅干菜加入锅中翻炒,加水至没过食材,放入香叶、八角、桂皮,大火煮沸切高压锅加热,直至肉质酥嫰。

酱牛肉

提前一天取牛腱子肉若干,切大块,浸泡若干小时去血水,沥干后加五香料、料酒、生姜腌制一晚。次日,牛肉冷水下锅煮沸焯水,捞去浮沫,捞出牛肉。领取一锅,加入盐、鸡精、葱姜蒜、生抽、老抽、八角、香叶、桂皮与牛肉一同煮若干小时,直至筷子可以戳入牛肉之中。关火,静置入味。

水煮鱼片

罗非片鱼片,加料酒、生姜提前腌制。油锅烧热,姜蒜花椒干辣椒爆香,加入豆瓣煸出红油,加入清水鱼骨煮沸,加入鱼片烫熟;加入剁椒、蒜蓉、盐、味精调味。另准备豆芽、豆腐切小块作为配菜,水开之后将配菜加入锅中,烫熟之后食用。

双菇豆腐

油锅烧热,下北豆腐煎至两面金黄表皮发硬,取出豆腐。取适量蘑菇香菇,对半切开,重新起油锅,姜蒜爆香,加入菇之后快速翻炒出香味,加入豆腐小心翻炒,加入生抽、老抽、盐、味精、大葱调味,加入小半碗水半没食材,烧开后切小火,慢慢收汁,最后加入水淀粉勾芡。

【汤】

香菇土鸡汤

土鸡洗净切块,加料酒和生姜焯水烘干。另起一锅,用姜蒜爆香,加入鸡块煎至两面金黄,捞出后备用。泡发香菇,刻花。泡发竹笋和笋衣,备用。将鸡块、香菇、笋干放入锅中,煮沸之后捞去浮沫,切小火煮120分钟至鸡肉烂熟、汤呈金黄色。最后放入笋衣,枸杞、加盐调味。静置一天,次日撇去鸡汤浮油,盛小锅加热即可。
